If this has been covered else where I'm sorry! :) But is the a way to have a show all products option for customers? For instance when they browse a certain category. instead of having to change the page they can just show all in that category.? ...and yes I'm a total noob to Zen

Not exactly. There is an "All Products" link in the categories menu which shows all categories' products in one list. You can also change the number of products that show per page in admin > Configuration > Maximum Values > Products Listing- Number Per Page.
