is there a way, when my customers check out, that my processor (quickbooks), can automatically process the card?

There doesn't seem to be any Quickbooks payment processor module for Zencart. Looking at their site it appears they only support a few 'webstore' providers.

There is in fact such a module. Go to Add Ons, Payment Modules, and on page 5 you will find QuickBooks payment module (ported from OSCommerce). It works, and many have it working. But... although it's very easy on the Zen side, setting up on the QB side is not trivially easy.
