The option does not exist. Gift Certificates are the same as cash.

Would implementing an expiration date on GCs require a lot of code change?
I agree with you that purchased gift certificates should not have an expiration date.
However, I don't sell any gift certificates, I give them away. I just don't want customers trying to redeem a GC a year or two years from now when I don't even know if I'll still be in business then.
By showing an expiration date I wouldn't have to deal with angry customers in the future.
I know I can use discounts coupons, and I already use them, the gift certificate is just another additional incentive.
