I need to set sales on individually items, not whole category's. individually items through out the store.Pick and choose what items are on sell

That is called Specials and is already built into Zen Cart.
Specials for individual items - Sale Maker for groups of items, i.e. categories.

You are correct Kim. Sorry about that. What I'm trying to say is that I would like to give individually percentage off per Item. For example on one certain Item I would like to give 20% off while on another one 25% another 30% and on like that.

The discount is simply based on the item or you mean give 20% off to customer A if they buy itemB?
